A French style Absinthe incorporating its own unique twist that our distiller has crafted with this Verte style. This blend includes traditional botanicals like grand wormwood(Artemisia absinthium), fennel seed, aniseed, Roman wormwood, hyssop, and lemon balm, alongside home-grown herbs such as lemon verbena and spearmint. Robust notes of fennel, aniseed, and licorice, balanced by a subtle bitterness and earthy undertones. Cedar Fox does not use any artificial colouring or added sugar in its Absinthe.
Produced in very limited small batches, our unfiltered Absinthe is a labor of love. As far as we know, Cedar Fox is one of only a few distilleries producing Absinthe in Victoria, Australia.

Absinthe Facts & Misconceptions:
Origin: Absinthe was originally created in late 18th-century Switzerland as a medicinal elixir using traditional ingredients made from grand wormwood, anise, fennel, and other herbs.
Preparation Ritual: Served by pouring cold water over a sugar cube into the absinthe, causing it to turn cloudy(louche).
19th-Century Popularity: It was favored by French artists and bohemians, nicknamed “The Green Fairy.”
Hallucinations: Absinthe does not cause hallucinations; the thujone content is minimal.
Absinthe as Poison: Myths of madness and criminality were propaganda, not fact.
Bans: Early 20th-century bans were based on misinformation generated by competing beverage industries and later lifted in many countries.
Color: Absinthe’s green color comes from natural herbs, not added colours. Also the green in authentic Absinthe can tend to slowly change from its vibrant green to light amber as it matures over time.
